Basic Lemon Sponge Cake Ingredients

Put the sugar and lemon zest in a blender. Blend until the lemon zest is fine. Add mixture to softened butter. Whisk with a mixer on medium until fluffy.

Beat in the eggs one at a time to the sugar and butter. Add the water, lemon juice, and vanilla. In a different mixing basin, use a whisk to mix the flour, baking powder, and salt. Add half of the flour mixture to the rest of the ingredients. Mix on low. Then add the rest of the flour mixture.

Blend at medium speed until the cake batter turns to sheen…turning white at the same time. The longer you mix the batter, the more air bubbles you create which results in the cake being more light and fluffy. Pour sponge cake batter into cake tin/s previously greased.

Bake in a preheated 350 degrees Fahrenheit oven for 25-30 minutes. The sponge cake should pull gently from the sides. It will be golden in color and spongy to touch. Test the center with a toothpick if it comes out clean it is cooked.

Take the sponge from the oven and let cool for 10-15 minutes before removing the cake from the cake tin. Let the sponge cake cool fully before frosting and adding your cake decorations How simple is that, now go and do baby proud and put those oven gloves on.
