Prime rib roast - Wondering what to cook on New Years's Day, why? If you want to rustle up something tasty and quick that goes well with every type of vegetable, and that every one will enjoy eating, then come this day cook the family some prime rib roast. Prime rib roast is a popular choice for Christmas Eve dinner, but if you want, it can be for New Years's Day dinner too.

It's a meat often served with Yorkshire pudding, a savory version of a Dutch baby (popover.) If you live in the UK and come from Yorkshire then in nearly every household before the main meal is served, a plate of yorkshire pudding is given as a starter with lashings of beef gravy poured over the top.

Are you considering cooking prime rib roast for you're New Years's Eve or New Years's Day dinner but looking for some ideas to cook it differently. Recipes below that will make your New Years Day dinner even better than your Christmas meal.

When looking for foods to cook look for healthy sorts. Only a couple of weeks back in the news it was announced that being obese as a teenager may be linked with an increased risk of multiple sclerosis as an adult, researchers say. A 40-year study of 238,000 women found those who were obese at 18 had twice the risk of developing MS compared to women who were slimmer at that age. Yet body size during childhood or adulthood was not found to be associated with MS risk, the US researchers report in Neurology. But an MS charity warned more research was needed to confirm the findings.

Standing Rib Roast

If the roast has been standing in the fridge then take it out and allow to stand at room temperature for an hour. Preheat oven to 450F. Mix dry ingredients in a mixing basin and blend. To help the rub stick to the meat, moisten a paper towel with water and lightly dampen the meat or use a light coating of oil. Starting with the underside of the joint (rib side) pat spice mixture over the meat getting as much as you can to cling to the meat. Turn the joint over and do sides, ends, and top (fat side.) Place roast on a flat wire rack, ribs down, fat side up in a large roasting pan. Sprinkle and pat remaining spice mixture on the top.

Put prepped meat in oven and roast uncovered for 60 minutes. When the hour is up immediately turn off the oven. Don't open oven door. Leave meat to sit inside the oven 4-5 hours. (The bigger the roast the longer time it has to sit.) Turn on oven to 375F and place roast back in the oven for half an hour for a medium rare roast.

Cajun Prime Rib Recipe

Seasoning mix (optional 1 Tablespoon Plus 1 tsp, salt 1 Tablespoon Plus 2 tsp, white pepper 1 Tablespoon Plus 2 tsp, fennel seeds 1 Tablespoon Plus 3/4 tsp, black pepper 2 1/2 Teaspoons Dry mustard 2 1/2 Teaspoons Ground cayenne pepper)

Remove fat cap off top of meat and keep. Place the roast joint, standing on the rib bones in a roasting pan. Using a sharp knife puncture through the silver skin several times so seasoning can permeate meat.

Sprinkle a generous layer of black pepper over the top (pepper should completely cover it) repeat with the garlic powder, then salt, completely covering the preceding layer.

Arrange onions in an even layer over seasoned meat. Place the fat cap back on top. Put in fridge overnight. Bake ribs in a 550F oven for 35 minutes until the fat turns a dark brown and crispy on top.

Take out from the oven and cool. Chill for about 3 hours in the fridge. (Juices will solidify, and from doing this the steaks can be cooked rare.) Remove fat cap and throw away. Using a knife remove onions and as much seasoning as possible. Take a long bladed knife and carve between ribs into 6 steaks (4 will have bones) trim the outer cooked meat from the 2 pieces that were on the outside of the roast. Season and cook meat steaks the way you like. To blacken the steaks: Mix the ingredients of the seasoning thoroughly in a small mixing basin. Sprinkle the steaks evenly on both sides with the mix patting it in with your hands.

Warm a cast iron skillet over a high heat until it is beyond the smoking stage and you see white ash on the skillet bottom approx 10 minutes. (It's vital the skillet is not too hot.) Place one steak in the hot skillet (cook one side at a time.) Cook on a high heat until the underside begins to show a heavy, black crust, about 2 to 3 minutes. And do the same for the other side. Serve each steak piping hot. This is not a dish to cook without a cookerhood as it can get quite smokey. It's an ideal dish for a barbeque, weather permitting that is.

Prime rib roast is certainly a New Years's Day meat to cook for dinner. There are many prime rib roast recipes to choose from so you may be spoilt for choice. Below is a popular beef recipe that when you cook it for the first time, it won't be the last.

Prime Rib with Roasted Garlic and Horseradish Crust

Preheat oven to 350F. Toss garlic cloves and olive oil in small baking dish and cover. Cook until garlic browns approx 35 minutes. Drain olive oil into blender. Cool for 15 minutes. Peel garlic and add to blender followed by horseradish and coarse salt. Puree until nearly smooth. Place rack on large rimmed baking sheet. Sprinkle salt and pepper over. Lightly spread a layer of garlic mixture on underside of beef. Place beef, garlic mixture side down onto rack. Cover and chill for about 3 hours or leave overnight.

Position rack in bottom third of oven; preheat to 350F. Uncover beef. Roast until thermometer inserted into top center registers 125F for rare. Allow to cool (30 mins) before serving on a platter; let stand 30 minutes. Nick the beef joint crosswise and drizzle heated meat juice over and serve with beet relish.
