Have you forgotten it's Shrove Tuesday on the 16th of February, and we all know what that means yes got it in one "yummy pancakes?" In the United Kingdom, Shrove Tuesday is also known as Pancake Day or Pancake Tuesday depending on who you ask.
An English Pancake is a thin, flat cake, made of batter and fried in a pan. Castor sugar (superfine sugar) is sprinkled over the top with a squirt of fresh lemon juice. The pancake is then rolled. Some people add golden syrup or Jam. Of course what is spread over the top or rolled inside the pancake boils down to personal choice.
If you want shredded cabbage wrapped in your pancake then you can have cabbage. It's just that traditionally pancakes made on Shove Tuesday usually come filled with sweet fillings. Basic Pancake Recipe
salt
2 eggs
200ml/7fl oz milk mixed with 75ml/3fl oz water
50g/2oz butter
caster sugar
lemon juice
lemon wedges
Instructions
Heat the pan till really hot, and then turn down the heat down, do a dummy run pancake first to see if you're using the correct amount of batter. 2 tbsp is about right for an 18cm/7in pan. Spoon the batter into a ladle so it can be poured into the hot pan in one go. Once the batter has been poured into the pan, tip it from side to side to get the base evenly coated. It should take only half a minute to cook; you can lift the edge with a palette knife to see if it's tinged a golden brown. Flip the pancake over with a pan slice or palette knife - the other side will need a few seconds only - then simply slide it out of the pan onto a plate.
Stack the pancakes as you make them between sheets of greaseproof paper on a plate.
To serve, sprinkle each pancake with freshly squeezed lemon juice and caster sugar, fold in half, then in half again to form triangles, or else simply roll them up. How much filling is used is up to them eating the pancakes. Leave the lemon and castor sugar within reach for them to help themselves.
Crepes
- 4 egg whites
- 1 cup of all-purpose flour
- 1 teaspoon of baking powder
- Salt
- 1 cup of milk.
- 1 tablespoon of powdered sugar
Preparation Instructions:
In a mixing basin, sift all of the dry ingredients inside then make a well in the center.Using another bowl beat the egg whites and then adds the remaining liquid ingredients.
Now combine contents from both bowls and mix thoroughly.
Lightly coat a frying pan or skillet with cooking oil. Heat the pan over medium-high.
Pour enough batter into the pan to make one crepe.
Cook turning once when browned on the bottom.
Pumpkin Pancakes Recipe
Ingredients:
1 medium egg1 cup of milk
¾ cup of unbleached white flour
¾ cup of whole wheat flour
½ cup of cooked pumpkin
1 tablespoon of sugar
2 teaspoons of baking powder
¼ teaspoon of ground cinnamon
Pinch of ground nutmeg
Pinch of ground ginger
Vegetable oil.
Instructions:
Using a mixing basin mix all of the ingredients together (except vegetable oil.)Use the vegetable oil to lightly oil a griddle, then once hot pour the pancake batter in.
Flip the pancakes over when bubbles break around the edges.
Serve pancakes hot.
Banana Pancakes recipe
Ingredients:
4 medium eggs, separated2 cups of flour
1 cup of milk
1 cup of pureed banana
1 teaspoon of vanilla
Pinch of cinnamon
Cooking Oil
Instructions:
Beat the egg whites until they are stiff; then refrigerate.Mix together the flour, egg yolks and milk.
Add the banana puree and mix.
Add the vanilla and cinnamon and blend thoroughly.
Coat the skillet with cooking oil; then heat.
Fold 4 tablespoons of egg white into 1 cup of pancake batter.
Pour into hot skillet.
Cook pancakes turning once.

For an Alpine taste, sprinkle some grated cheese over the top of the pancake as soon as you flip it. By the time the underside is cooked, the cheese will be melted. Season and top with a couple of slices of cured ham and some wilted spinach.
Layer smoked salmon slices over the pancake, with a squirt of lemon and spoon a dollop of crème fraiche on top with fresh dill and black pepper
Heat a little dulce de leche or toffee sauce in a pot, and add a couple of sliced dessert apples. Cook till apples are soft and well-coated in the sauce. Serve in the pancakes with a scoop of vanilla ice cream
Top pancakes with Greek yoghurt, sliced bananas and a drizzle of honey. If you don't like bananas, try fresh berries, segmented oranges or just a handful of dried fruit and nuts.
