Pancake recipe and filling ideas - It’s not long now all you pancake lovers. In about a fortnights time (March 8th 2011) you’d best get your helmet on if you tend on being in the kitchen while pancakes are being tossed up in the air.
Shrove Tuesday (Pancake Day) is when everyone gets to eat pancakes. Although the same type of pancake mix is likely eaten by a lot of people, the type of filling or topping may differ.
Because pancake fillings or toppings come varied, people tend to make their own choice on what to eat with their pancakes to make it tastier instead of the expected syrup or lemon juice.
Below is a simple recipe showing you how to make a traditional pancake, along with a vast assortment of ideas to choose from to fill the cooked pancake with.
Pancake Ingredients:
(Makes 4):
- 1 egg
- 300ml milk
- cooking oil
- 100g plain flour
- Pinch of salt
Pancake Cooking Instructions:
1. Combine flour with salt in a bowl and make a well in the centre of the bowl and add the egg.
2. Whisk whilst adding the milk until smooth with no lumps. Pour the mixture into a jug. Pancake mix store in the fridge for up to six hours before use.
3. Heat a little oil in a frying pan, ensuring it covers all the base of the pan. Pour some mixture into the pan making sure it's spread evenly.
4. Cook until one side is golden brown and then turn over to brown other side. To tell if your pancake needs flipping or turning look for small bubbles forming on the sides.
Pancake Fillings - Sweet
- Traditional - a squeeze of lemon or sprinkle of sugar
- Sliced banana and a spoonful of honey
- Chocolate - either a spread such as Nutella, or a crumbled chocolate Flake

- Cooked mixed berries/fruit compote
- Chopped apricots with low fat yoghurt
- Tinned fruit (peaches - pineapple – pears – apricot etc)

If you want to surprise the kids fold a pancake to hold colorful Jelly Tots or Smarties. Make sure they don’t burn their fingers in the rush to get at the sweets. Smarties are best placed inside a cool pancake so colour doesn’t run. Also have their toothbrush in view to remind them to clean their teeth after eating the sweets.
